About this dish

Tomatoes, onion and garlic roasted until they char at the edges, then blended with smoky chipotle, lime and coriander. It's a proper salsa roja: deep, smoky and gently hot. Spoon it over the Chicken Tinga Bowl or Chicken & Rice, onto tortilla chips, or across fried eggs at the hut.

A few useful answers

How spicy is it?
Gently. The chipotle brings smoke first and a warmth that builds slowly.
Hot or cold water?
Either. Hot water gives a warm salsa in a few minutes; cold water takes a little longer and keeps it fresh.
What does it go with?
The Chicken Tinga Bowl, Chicken & Rice, tortilla chips or eggs. It sits well beside the guacamole too.
