A big lunch on a day off
About this pouch
Beef pulled into strands and simmered in tomato, onion and red pepper, black beans cooked with cumin and a touch of sugar, and white rice to hold it all together. This is pabellón criollo, Venezuela's national dish, and the beans give it away: soft, dark and a little sweet, the way caraotas should be. It's for a big lunch on a day off, when you want a plate with three things on it and nothing to wash afterwards. It's cooked first, then freeze-dried whole. Stir the beef and the beans through the rice, give it 8 minutes and eat.

Questions about this pouch
- Where are the tajadas?
- It ships without tajadas. Fried plantain soaks up oil and loses its texture in freeze-drying, so it stays out; fry a ripe plantain alongside if you have one.
- Is it spicy?
- No. Cumin, pepper and garlic season it, and there's no chilli in the recipe.
- Can I make it with cold water?
- Yes, in about 20 minutes, and the time varies.
