A cold evening at the campsite
About this pouch
Beef two ways, diced for something to bite on and minced to thicken the sauce, with kidney beans simmered until they're soft and rice underneath. What sets it apart is the smoke: pimentón de la Vera and a little cocoa give it depth, while cumin, chilli and garlic bring a medium heat that warms rather than burns. It's the pouch for a cold evening at the campsite, when the light has gone and the van door is the only shelter. It's cooked first, then freeze-dried whole, so the beans come back as soft as they went in. Pour in the water, zip it, wait 8 minutes and eat it from the pouch with your hands round its warm sides.

Questions about this pouch
- How hot is it?
- Medium. Chilli brings the heat; smoked paprika and cumin bring the depth.
- Why two kinds of beef?
- Diced beef keeps its bite once the water is in; minced beef melts into the sauce and thickens it. Together they eat like a chilli that's been on the hob all afternoon.
- Does it work with cold water?
- Yes, in about 20 minutes, and the time varies. Chilli is better hot, so use the kettle when there's one.
