Midweek at the desk
About this pouch
Chicken, aubergine and green beans in coconut milk with lemongrass, lime zest and a red curry paste of chilli, garlic, shallot and galangal, spooned over rice. The vegetables are cut to one size so they soften together, and the aubergine keeps its shape instead of collapsing into the sauce. It's mild and round rather than a test of nerve, which is what a Wednesday at the desk calls for. The curry is cooked first, then freeze-dried whole, sauce and all. Stir well once the water is in, so the sauce reaches the rice at the bottom, and it's ready in 8 minutes.

Questions about this pouch
- How hot is it?
- Mild. The red curry paste brings warmth and the coconut milk rounds it off.
- Does it work with cold water?
- Yes, in about 20 minutes, and the time varies. The coconut sauce is at its best warm, so use the kettle when there's one.
